Last night we were treated to our first home cooked Vegan Dinner. The amazingly talented Lindsay Nixon of Happy Herbivore ( and her awesome hubby Scott, created a wonderful plant based dinner for us.

As someone who has been Gluten and Dairy free for almost 10 years, there are some foods I rarely get to experience. Lindsay created a “ranch” dressing, a “cheese” ball. Both rocked and set the stage for what was to come. Cauliflower wings, potato salad, a Finnish staple of beats sprinkled with dill and a jalapeño cornbread. After all this amazingness, a blueberry cobbler rocked my sweet tooth.

A truly wonderful time with friends. The pups got lots of love from everyone. Even Gaia enjoyed herself (well, maybe).
